DIY Giant samoas 😱😱

This was a really fun recipe to make I must admit though that if you’re short on time and really hungry then don’t make this as it does require a lot of prep. Now that I think about it this kinda like between a giant burrito haha but it’s the Samsoas potato filling that makes the cut. Alright let’s crack on with our 4th back 2 school recipe. As with all my recipe feel free to add anything you want. Add your fave veggies, sauces what ever that vegan tummy of yours desires. Enjoy!

INGREDIENTS 

  • your favourite tortilla wrap. Get them in a medium or preferably a large so that you can fold them into triangles 
  • 3 diced Potatos
  • 2 diced Carrots 
  • 1 cup of Peas
  • 1 chopped Onion 
  • 2 chopped red peppers 
  • 4 Garlic cloves 
  • 1/2 a table spoon Fennel seeds 
  • Sea salt 
  • Black Pepper 
  • 1 tsp of Turmeric 
  • 100 ml of Vegetable stock 
  • 2 tsp of Tandoori 
  • Fresh basil leaves 
  • 1 cup Black beans 
  • 2 tsp of cumin 
  • Olive oil to garnish not fry 

METHOD 

  1. Firstly boil your potatoes in a pot. Make sure that they’re the waxy kind as we don’t want the potatoes to fall apart and become a mush. 
  2. In the meantime proceed to chop, dice and prepare you’re remain veggies. 
  3. Grab your frying pan and place some cooking oil. Place your onions  in the pan on a medium heat. 
  4. Then proceed to add your remaining veggies, spices and stock and allow to simmer for about 15 minutes. 
  5. Halfway through add your cooked potatoes to the mix. 
  6. Once thesamosa filling is all done allow to completely cook before assembling the giant samsaos. 
  7. Once it’s cool grab your desired tortilla wraps, vegan butter or oil or even water. 
  8. When add the filling  to the wrap make sure to leave plenty of room for folding. Too much of the filling and it won’t close or worst it will burst. 
  9. Place the filling in the centre of the wrap and garnish the exterior of the wrap with either the vegan butter, oil or water.
  10. Now to close it. Fold the bottom segment of the tortilla upwards straight across. 
  11. Then proceed to fold the opposing side onwards on top.
  12. Now to ensure they don’t unravel place them face down onto a baking tray with the folding side face down. 
  13. Repeat the process with as many giant samsaos you wish to eat. 
  14. Then place in the oven and allow to bake for 10- 15 minutes.
  15. Once they’re all done enjoy.
