Surprisingly this was a big hit in my instagram when I posted it on the gram a few weeks back. As promised I will provide you all with the recipe for this quick easy meal or snack depending on how much you use.
These are perhaps two of my favourite vegetables so you can tell I eat this regularly. Once you try I’m sure you’ll be in the same position as me. Here’s the recipe…..
2 medium sweet potatos
2 fairly ripe plantains
Cold pressed extra olive oil
Himalayan pink salt
Firstly chop up the sweet potato into small chunks so that the plantain can cook simultaneously alongside.
Then slice the plantain and place the two veggies in a bowl
Add 1 tbsp of the olive oil to the bowl and mix or shake well
Then add the spices and herbs and shake or mix well
Prepare you baking tray and lay the food down flat to ensure they cook evenly
Place in the oven at 180-200 degrees Celsius.
Allow to cook for 30-40 minutes keep an eye on them as they burn easily.
These taste great with dips like hummus or salsa feel free to add other veggies or rice.
